Reports indirectly to: General Manager, Office Manager, Sales Team

Job Synopsis

The banquet assistant manager is to assist the banquet manager in setting up events and supervising servers.

 

Duties           

  • Responsible for seeing that all servers are in proper uniform for all events (see dress code below)

  • Responsible for the setting up of tables and buffets as needed for events with silverware, plates, glasses, etc.

  • Responsible for the stripping of tables and buffets following events - making sure all materials are properly placed for cleaning and storage

  • Responsible for the cleaning of the back hall following events

  • Assist with laundering of table covers, etc., polishing silver, wiping down salt & pepper shakers, glasses, etc.

  • Assist with inventory of plates, glasses, silverware every 6 months

  • Assisting banquet manager with scheduling and keeping hours in line

 

Supervision of Servers

The banquet assistant manager is responsible for the actions of servers as they perform their tasks. The banquet assistant manager is to require that servers maintain an attitude of respect and professionalism while serving. Servers are to always be attentive to the needs of their customers. Make sure that servers provide their customers with water, coffee, or tea (as needed) and remove dishes from the table as required. Clean up any kind of spill as soon as it happens.

                       

Personal Appearance

The banquet assistant manager will maintain a professional appearance suitable for meeting with clients.  Her/his appearance will set the standard her/his staff is expected to follow.

 

Dress Code

            During Events: Black pants with polo style shirt, and JEB logo, non-slip black shoes.        

            Setup only: Jeans, khakis, capris, casual shirts, sweaters, sweatshirts, polo shirts, and

            t-shirts are acceptable. NONSLIP CLOSED TOE SHOES ARE MANDATORY.        

 

 Absolutely not Permitted: Midriff tops, shirts with potentially offensive words, logos, or slogans, or shirts that undergarments can be clearly seen, and halter tops.

Pastry Chef

The Bruce Convention Center is looking for the following position:

Pastry Chef
 

Full Time – Flexible schedule
 

Weekends availability a must
 

Pay Range- $38,000-$40,000 a year
 

Creates delicious pastries, desserts and baked goods.  Works with our head chef to create new dessert items that compliments and enhances our menu. The ability to work quickly and meticulously under pressure is a must.

Responsibilities

  • Direct the creation and preparation of all desserts, pastry dishes and baked goods

  • Create scalable recipes for all new dishes

  • Adhere to set recipes and taste test for quality assurance

  • Provide exquisite presentation and plating techniques

  • Ensure all pastries are uniform and up to standard

  • Source and select necessary pastry ingredients

  • Perform quality checks of ingredients and throw out expired goods

  • Organize and store needed tools and materials (food or otherwise)

  • Maintain and count inventory and work towards cost reduction methods

  • Demonstrate proficiency in creation of signature desserts and pastries

  • Collaborate with head Chef to create exciting new desserts that complement our menu

  • Manage food cost and inventory for pastry goods, inform Chef of needed supplies

  • Stay current and informed of useful culinary trends

  • Organize tastings to test out new dessert and bakery items

  • Assist the Chef in any department needed, including prep work for upcoming events

  • Adhere to all sanitation, safety and food preparation laws

Qualifications

  • High school diploma required

  • Associate’s degree in Pastry Arts or other culinary certification highly desired

  • 2+ years of kitchen experience preferred

  • Proficiency using kitchen equipment and appliances

  • Dexterous, consistent, and precise baker

  • Thrives in a fast-paced environment

  • Clear and effective communicator

  • Extremely organized with a high attention to detail

  • Able to work different shifts as needed

  • Assist in any department if needed

  • SERV Safe certified

Working Hours

The Business hours of the JEBCC are from 8am-5pm Monday – Friday & Event hours are Monday – Sunday. The pastry chef is required to work a minimum of 40 hours per week; overtime is only permitted if necessary. The pastry chef must be available Monday-Sunday for day and night events. One kitchen employee must be in house during working hours and one kitchen employee has to be available during event hours.

Inventory Management, Ordering and Cost Control

  • All product purchases will be made to ensure excellence in quality within our food cost margin.

  • Monthly inventory

  • Properly plan and determine quantities for events on weekly bases, inform Chef what needs to be ordered

  • Provide the Bookkeeper with all documentation related to purchases in a timely way.  i.e. copies of invoices, credit card receipts, and receipts for out of pocket expenses

Preparation of Food and Execution for Each Event 

  • Coordinating with the Sales staff/clients to assure timely delivery of menu. 

  • Daily review of Calendar and BEOs for changes, special requests, etc. 

  • Responsible for maintaining the quality and quantity of food served.

Cleaning and Maintenance

  • The pastry chef and kitchen staff are required at ALL times to be meeting or exceeding Christian County Department of Health standards and will be held accountable for inspection findings.  Christian County Department of Health standards are the minimum standards for cleanliness in the center’s kitchen.

Personal Appearance

  • The staff will maintain a professional appearance suitable for meeting with clients.  The JEBCC will provide 2 jackets embroidered with name.  Hair must be covered with a net or hat and pulled back.  NONSLIP CLOSED TOE SHOES ARE MANDATORY IN THE KITCHEN!!!

Kitchen Assistant

Duties

  • The Culinary Assistant is responsible for food preparation and works cooperatively with the Chef and must have the ability to work independent whenever required. The Assistant has to plan ahead for any supplies needed in his/her department.

  • Properly plan and determine quantities needed for events on weekly bases

  • Daily review of Calendar and BEOs for changes, special requests, etc. 

  • Maintaining the quality and quantity of food prepped, cooked and served

  • Will help with cleaning event dishes and kitchen area as needed.

  • Assist in any department if needed

Banquet Servers
